Founded in 2021 by Scott Rao and Mark Benedetto, Prodigal Coffee brings decades of roasting expertise to a young, focused roastery. Rao, author of The Coffee Roaster's Companion and Coffee Roasting: Best Practices, spent thirty years shaping the language and technique of modern roasting before turning that knowledge inward. Benedetto, a trained chef and Q-Grader, brings a cook's precision to the craft after founding Last Stand Coffee in San Francisco.

Together they roast in small batches out of a warehouse space in Boulder, prioritising strict quality control over scale. There's no public café — coffee is sold direct, largely by subscription, with a focus on clean, fruit-forward light roasts that let each origin's character come through. The result is a lineup shaped less by tradition and more by two people who've spent their careers thinking hard about what makes a roast genuinely good.

Percolate is featuring the seasonal line up from Prodigal Coffee. All coffees are roasted for either filter or espresso brewing.
