Ilse Coffee (Pre-order)

Founded in 2019 by Lucas Smith and Rebecca Grossman, Ilse Coffee began as a two-person operation in Stamford before settling into a converted auto repair shop in North Canaan. The name honours Lucas's grandmother, a nod to the women who shaped his path into coffee.
Ilse roasts light and expressive, prioritising clarity, balance and sweetness over intensity. The approach is deliberately small in scale — tight, rotating lots sourced through direct relationships with smallholder producers across various coffee producing regions, chosen as much for traceability as for cup score. It's a philosophy built on restraint: fewer coffees, held to a higher standard.
What began as a roastery has grown into a pair of cafés spanning Connecticut and Massachusetts, each one an extension of the same instinct — that coffee, done well, is a way of connecting people to origin, and to each other.
Percolate is featuring the seasonal line up from Ilse Coffee. All coffees are roasted for either filter or espresso brewing.
